    Don´t epideromancers break taboo if they are injured in battle?

    no. it spells out what conditions they break taboo in the school and specifically uses that as a time when it does not break taboo. They only break taboo if they intentionally allow someone to alter their body, such as going to a doctor or getting a tattoo. In battle, the epideromancer will be injured against his will and hist best efforts, thus the taboo is not broken.
